We had a great play date today with good friends and even planned a mini vacay for early this summer. Austin, Jack and Michael have been in school together since they were three; Peyton and Joey are in school together now; AJ is almost three and all the babies are within a few months of each other. They have so much fun when they are together. Today they played Mario Kart, hide and seek, and "get the goobli goblin; " they ate a ton of cookies, cupcakes, and mac n cheese; and they all were upset when they had to leave. Austin asked when we were having a play date again three seconds after they left. I hope they all stay friends forever. This summer the boys are going to play t-ball together, and the three dads are going to coach. I cannot wait for baseball season to begin!
So, needless to say, I had a great time today too laughing and gossiping with the girls. We ate a great lunch and enjoyed the smell of the crock pot chicken cooking away. And even though Melissa almost made me crossover to the dark side with the smores cookies she brought, I stayed strong and resisted the urge to shove one in my face. I had a great Paleo day today.
Breakfast: Totally said that I was going to heat up an egg muffin this morning for breakfast, but I was lazy and didn't want to pull out the microwave. So, instead I just had coffee and a glass of fresh squeezed OJ.
Lunch: I had a salad with the everyday vinaigrette and a baked potato with grass fed butter and a little BBQ sauce. I also had some fruit. I could kiss Danielle for bringing watermelon. I have been craving it for weeks!
Dinner: I made the crock pot lemon pepper chicken. This morning I put it together within three minutes, but again, I had to touch and shove my hand into a raw chicken.. Not fun. Not fun AT ALL. I set it and forgot it for eight hours. When it was finished and I began to slice it, it literally fell apart. It was so tender that it fell off the bone. I had mine on top of a salad. Austin, Peyton and Paul had it with some of the gravy from the crock pot. Austin said it was too plain and asked for some ranch to dip it in. I, too, thought it was pretty plain tasting. I think out of all the whole chicken recipes I have made, this was my least favorite. I don't think I'll make this one again which stinks because it was so simple.

Snack: A piece of Ghirardelli sea salt chocolate. Delish! I may have some of the nut mix too.
Tomorrow night Paul and I have a department party at a co workers' house. I am a little nervous how I will stick to Paleo, but I am hoping there are some options for me. If not, I will just eat whatever is the least bad for me. Fingers crossed that won't be necessary!
