My healthy eating dreams for today were squashed when Paul came home from picking up a project from my Uncle Jerry. He not only brought the project home but also a half of a mashed potato cake. Uncle Jerry knows how much I love this cake. It is the most delicious spice cake I have ever had, and I crave it. But only my Uncle Jerry makes it for me. My mom refuses because it is a huge pain in the ass. It has close to 20 ingredients in it, and it takes forever to prepare. I never make it for myself because I never make mashed potatoes which is obviously a required ingredient in mashed potato cake. So even though it has sugar and flour in it, both forbidden foods on Paleo, I knew I had to have some. It truly is a labor of love, and I couldn't not try it when my Uncle Jerry made it just for me! He gave me half of a bundt pan of cake, so a lot. I had a slice, gave Paul a slice and each of the kids had a slice. This is what is left of the cake as of 7:52pm:

Guess who may have had another slice or two. It is soooo good. My theory is that if I eat it all today then it will be gone, and I won't be tempted tomorrow!! Paul and I may finish it off tonight with some coffee. As much as I want to be mad at myself for having such little willpower, especially after coming off of the high of the weight loss, I'm just not. It's too good and too rare of a treat to miss out on. So, thank you Uncle Jerry for the delicious surprise!!
Even though I was pretty proud of my weight loss this week, I spent the morning feeling like a crappy mom. Peyton asked me close to twenty times this morning to play with her, and I always gave her an excuse as to why I couldn't. Doing dishes, preparing breakfast, folding clothes, feeding Brayden, making lunch, and so on and so on. I felt terrible when I realized that I kept getting distracted and never ended up playing tea party with her. So, after Paul got home from working on a presentation with a co worker, I set out to create a real tea party for her and I. She said the boys could join us as well, so the kids and I sat down for a mid afternoon tea. Peyton sat at the table with me for an hour and a half sipping on her sparkling lemonade and munching on her snacks while telling me all about the adventures of her stuffed puppy and lambie. I'm really glad I stopped worrying about the housework and spent quality time with her this afternoon because I had the best time.

Brayden tried out a cup with some water in it for the very first time today. He liked sucking on the handle more than anything else, but he did take a few small sips of water. What a big boy!
While we were at the tea party, Paul was perfecting his Rainbow Loom skills. He crafted a triple fish tail for Peyton and a Hexafish for Austin.

Breakfast: Coffee and a ridiculous amount of red grapes. They were 99 cents a pound at Caputo's. I was so excited to be eating a fruit that wasn't an orange or an apple!
Lunch: We had leftover cheese fondue for lunch. I had grapes and apples with a teeny tiny bit of cheese and then I ate some of the leftover meat from last night that we cooked before we cleaned out the pot.
Dinner: As promised, I made Mexican beef skewers. They had to be marinated ahead of time which I did at about 2:00. We ate at 5:30, so they had plenty of time to meld. To be honest, I was pretty skeptical of these because the recipe called for two tablespoons of cumin which I hate! The marinade smelled like arm pits. It was super easy to prepare though; It was done in 10 minutes. When I pulled the meat out of the fridge to skewer the pieces, I couldn't believe how thick the marinade got. It was like pulling pieces of meat out of chocolate frosting. They were very well coated and easy to skewer.
Prior to grilling
Mexican Beef Skewers
2lbs Sirloin Steak
6 cloves garlic
1/2 cup olive oil
2 tablespoons lemon juice
1/4 cup unsweetened cocoa powder
2 tablespoons cumin
2 teaspoons cinnamon
1/2 teaspoon chipotle powder(I did not use because I did not have any)
1 1/2 teaspoons sea salt
* Blend all marinade ingredients in a food processor until smooth. It will be a thick paste. Pour over meat and marinate for at least two hours.
I then went out into the snow to grill them on olive oil soaked grill plates for about five minutes per side. They charred a little on the outside but were a perfect medium well on the inside. I was super nervous to try it because it still smelled like body odor, but I added it to a salad and tried to talk myself into thinking it was the Chipotle salad that I love so much. It was actually pretty awesome! Very, very tender and so flavorful, and it didn't taste like what I imagine arm pits would taste like. Surprisingly, the kids really loved the meat too. I think I would make it again especially in the summer when it is grilling weather.
Steak, black beans, and guacamole with romaine. I also had a small sweet potato.
Paul's dinner. The recipe called for a chipotle cream and cilantro pesto. Paul doesn't do cilantro so we used the basil pesto from the bruschetta. I bought Boars Head Chipotle sauce.
Snacks: Mashed potato cake, mashed potato cake, and mashed potato cake.
Tomorrow Chicken Cacciatore for dinner and most likely a salad or lunchmeat rolls for lunch. Hopefully, there will not be any mashed potato cake left for me to eat by then!
