2 Days in 1 Post

First of all, let me say how surprised and touched I am that so many of you missed reading my blog last night!  I had no idea so many people were following me on my journey through Paleo.  Thank you.  It means a lot to know that people are actually reading what I write, and now I really will have to hold myself accountable knowing that all of you are waiting to hear about what I ate!

So, the deal with yesterday and why I didn't blog...Two months ago, Paul and I fell in love with a house via it's picture online and it's location.  We called the realtor immediately and set up an appointment to go see it. The morning we were supposed to go see it it sold after being on the market for 233 days.  I was pretty upset. It looked like our dream home from the pictures.  It was a short sale, so my realtor tried to give me hope that it could fall through; I was not very optimistic. BUT, yesterday our realtor called to say that the deal had fallen through and asked if we were still interested in going to look at it.  Hell yeah we were! Paul had meetings and class last night and tonight, so he wouldn't be able to see it until Thursday night. Our realtor suggested that I go see it immediately and either rule it out or insist that Paul go back to look at it ASAP.  So, the kids and I went to the house at 11:30am yesterday.  Side note: We had driven past the house initially after seeing it online with the kids.  We told them it was a house we were hoping to look at and if we liked it, we would maybe buy it. Austin freaked out in a good way and called it the "three things house:"
1) It has a big yard, so we could get a swing set. 2) It is walking distance to the splash park. 3) It is on the street behind Grandma Cathi's house, so they could sneak over there whenever they wanted to.  Austin may have been equally, if not more, upset as I was when the house sold before we could see it.  So, when I picked him up from school on Tuesday and told him where we were going he was very excited!

We went inside the house and looked around and there was a lot I liked, but a lot I didn't like too.  I was torn.  When we left I told the realtor that Paul had finals on Wednesday(today) and that he would come home in between finals and Masters' class to look at the house.  That was our plan.  When Paul got home last night, we sat down to talk about the house.  As I was explaining everything to him, he stopped me to tell me that I had yet to give a real positive to the house other than the location.  He was right. All my statements were. " If it had this..., If that wall could be torn down..."  Therefore, we spent the night making a pros and cons list and realized the cons outweighed the pros.  These were our top three of each:

Pros:
  • 2658sq ft
  • Location(on a cul de sac and in the middle of Bartlett and walking distance to pretty much everywhere we go)
  • Price
Cons:
  • No bathtub and a miniature Master bath(as big as a 1/2 bath)
  • Several walls would need to be removed to make it the lay out we want in our next home
  • About $50,000 worth of remodeling needed
But, the biggest reason that we have for passing on this house is because once I stepped inside, I didn't see us there. I didn't see us celebrating birthdays in that house, I didn't see Brayden taking his first steps in that house, and I didn't see us staying in that house until we were old and grey.  I didn't have that gut feeling that we needed to build a life there.

So, we will not be packing up our stuff quite yet. As of now, our plan is to put our house up for sale in March or April but nothing is a definite.  I am confident though that our forever home is out there; we just need to find it.

For these reasons, I did not have time to blog last night, and I apologize.  Yesterday was a pretty boring food day anyway.  Nothing exciting, but here you go.

Breakfast: Coffee and a pear in the line to pick up Austin from school.  It was 10:15 before I had time to eat something. 

Lunch:  I had a few ribs that I ate cold. We bought a slab from Mariano's on Sunday because they were $10, and we all love them.  I also had an apple.

Dinner: I had a small salad with the kids and made myself an egg scramble with broccoli and ham when Paul got home. 

Snacks: While discussing the house, I ate a WHOLE chocolate cake.  I was sick. Too. Much. Chocolate.

Truthfully, I realize now that I really didn't eat that much yesterday. I think the stress/excitement of the house distracted me.

Onto today's events and eatings...The morning was very calm and quiet. Peyton and I hung out while Austin was at school and Brayden was napping. Then we picked Austin up and headed to Dianna's for a play date.  The kids spent almost the entire 4 hours building a train track and playing Wii.  They had a great time and all played very nicely together which gave Dianna and I plenty of quiet time to gossip! 

Lunch: Dianna made a fabulous lunch as always. She made us salads with avocado, cucumbers, craisins, and I threw clementines and apples on mine. It was delicious and enhanced by the fact that she made the balsamic dressing I love.  She is the bestest friend ever! The kids had a great meal too, and throughout the day tried to eat her out of house and home.  It's her fault; she has too much yummy stuff at her house to eat!  We stayed until about 4:30 and then headed home to make dinner.

Dinner: I was going to make tomato soup, but surprise surprise, I was missing an ingredient!  I did have all the stuff for egg muffins though, so it was breakfast for dinner at our house tonight.  Dinner was on the table in about 20 minutes. They were very easy especially since I had already chopped all the ingredients for salads.  I used ham, mushrooms and broccoli, but you could use whatever veggies and proteins you have on hand. I whisked eight eggs together and seasoned them with salt and pepper.  I Sautéed all the veggies and ham in grass fed butter and then let them cool before adding the eggs.  I scooped the veggie/meat mixture into jumbo muffin tins and poured eggs on top. 
I added slices of cheese on top of the kids' eggs.
 
I put them in the oven at 350 degrees and set the timer for 10 minutes. When I checked them after 10 minutes, they were still not done. I put them in for another 5-6 minutes which was too long.  The eggs were still good, but not exactly fluffy. Another 2-3 minutes probably would have been enough.
The finished product. The tallest one was just an egg and cheese mixture, so nothing was weighing it down. They were really, really good.  I put a little spreadable fruit jelly(no sugar) on top of mine and enjoyed them immensely.  There are two left for tomorrow's breakfast.  I'll just pop them in the micro for a few seconds and voila...eggs on the go!  This is a great recipe to make at night and use for breakfasts throughout the week. They save in the fridge for three days, but they can easily be frozen as well.
 
Snacks: Fruit snacks and in about 10 minutes I will be eating the last of the chocolate cakes.  Thank God.  They are similar to the bundt cake in that I cannot stop eating them if they are in my house!
 
Tomorrow, I am having friends over for lunch and a play date which should be interesting since my children are still awake right now. I told them they could play their leap pads for a little while at 7:30pm and then they had to go to bed. I just went up to check on them and they were still wide awake.  Hopefully, they will not be crabby for their friends.  I am planning to do a baked potato and salad bar for the moms. Is that okay Danielle and Melissa?  I hope so!  And for dinner, since we will have friends over all day tomorrow and I don't want to worry about cooking, I am finally going to do the crock pot lemon pepper chicken!  It should be a great day of eating!
