Beef: It's What's for Dinner

Back in full swing with all the kids activities.  Peyton had gymnastics this morning, and Austin had the first day of floor hockey league late this afternoon. We had to run to Play it Again Sports right after school because somehow I forgot to go the last 36 days since I signed him up for this class to buy a helmet and gloves. He wore a bike helmet last year, and Paul was mortified. The fact that the helmet was a shark with a large fin going across the top may have had something to do with his strong feelings towards it. Paul didn't think he looked tough enough. What's tougher than a shark? I'm sure as hell afraid of them. When I told Paul that I signed Austin up again, he responded quickly that Austin needed a proper helmet this year.  So, we drove out to Schaumburg today only to find out that they had nothing in Austin's size. The kid has a giant head, but his hands are too small.  Go figure.  Austin was pretty upset that we were leaving with nothing for him to bring to hockey, so we ended up buying him a new stick.  He was crazy excited.  I was not so excited that Paul was going to walk into hockey and see the shark again.  Luckily, my amazing neighbors came through and gave Austin one of their hockey helmets to use for the season.  Paul walked into the gym, and I saw his smirk when he found Austin.  First words to me were, "Nice helmet."  Needless to say I had two very happy boys at hockey tonight. Brayden was bouncing on my legs like a loose spring so really I had three happy boys.  Peyton ran around the gym with her bestie Kathleen and hid under the bleachers from boys.  Sweet Jesus, she is only four and already knows about going under the bleachers.  We are going to have our hands full when she gets older.  Luckily she has two brothers to help Paul scare the shit out any boy who tries to date her :) 

As promised, I made flank steak for dinner because it is prepared ahead of time. I wanted to be able to get food on the table relatively quickly once we got home from hockey at 5:30.  It was an awesome dinner as were my other meals today.

Breakfast:  Coffee at home with the last few drops of cream and a banana.  Then I went to Starbucks during gymnastics with all the other moms, as it is our Friday morning ritual, and got a Buy 1 get 1 FREE tall coffee which they very generously poured into a venti cup for me. I used heavy cream ,which is allowed on the 80/20 paleo, cinnamon, and one packet of raw sugar.  I enjoyed it thoroughly.  Did I want my turkey bacon breakfast sandwich that I normally get on Friday mornings? Absolutely.  Did I cave and buy it?  No, I did not.  Score one for the team.

Lunch: The last of the leftover pot roast and OMG, it was sooooo good again.  I also had several blackberries. 

Dinner:  I chose my most favorite flank steak recipe.  I love it the first night when we have it, but I really love it the next day on top of a salad with balsamic.  However, since I had to shop at Jewel, I only bought a 1 and 1/2lb steak instead of the normal three pounder I would typically buy from Caputos or Marianos. That said, I still used the same amount of marinade as the recipe called for. I did not lower any of the amounts to account for less steak. It is not a Paleo recipe per say, but is made Paleo by using gluten free soy sauce.  I love this recipe because though you can marinate it overnight it tastes just as good after marinating for only a few hours.  I put my marinade together around 2:00 this afternoon, and we grilled it around 5:45pm. Poor Paul.  I saw that it was going to be in the upper thirties so I thought it wouldn't be an issue to grill.  As soon as he went to turn the grill on it started sleeting.  He grilled with an umbrella.  What a amazing husband I have. Especially since my kids usually won't eat steak because they complain it takes too long to chew and their jaws hurt.  We usually only buy filet mignon, so I'm not exactly sure how this is possible, but nonetheless they complain every time I say we are having steak for dinner.  Tonight was no different.  Fast forward 20 minutes and I had to leave before sitting down to dinner to put Brayden to bed because he didn't nap well today and was exhausted. In the middle of rocking Brayden to sleep, Austin tiptoes into the room and whispers, " Mommy, can I have more steak?"  I asked him what happened to his, and he said he ate it all and that daddy said he couldn't have more because then there would be none left for mommy.  Of course, I told him he could eat my pieces.  He didn't end up eating it though because after eating all his veggies, he said he was full.  Five minutes after Austin left, Peyton quietly sneaks in and whispers, " Mommy, I ate all my steak!" Then she gave me a thumbs up and walked out the door.  So pretty much if my steak hating children enjoyed this recipe this much, it must be a winner. Try it! We also had steamed broccoli and green beans. Unfortunately, as I expected, we did not have leftovers so my salad will be naked tomorrow. Snacks: I had a handful of the nut mix I made and plan to have a smoothie tonight. I typically have these as an after dinner treat or, when it is not so freakin freezing outside, as my breakfast.

1 cup raw baby spinach
1 cup frozen berries(any variety)
1 whole banana
Almond milk(any flavor) as much as needed for desired consistency

I like my smoothies thick, so I probably only add 1/4 to 1/2 cup milk.  You cannot taste the spinach at all, but if you use a lighter color almond milk(plain, Vanilla) you will see the spinach and the smoothie may turn a greyish color.  It reminded me of sludge. I am a visual eater, so I use chocolate almond milk to disguise the spinach.  These satisfy my sweet tooth, and they really fill me up. In the morning, it gives me so much energy that I often have to force myself to eat lunch. 

Not really sure what will be on the menu for tomorrow.  Maybe a Cobb Salad with homemade vinaigrette.  I will be making egg muffins for breakfast tomorrow though that I can keep in the fridge for up to three days as an easy and quick breakfast option.  I may also make a  Paleo treat tomorrow, so stay tuned...
